Jimmy's meatballs

Let's make it.
Soak the crumbs
Mix the breadcrumbs with cream and milk. Leave for ten minutes to absorb the liquid.
Shape and chill
Mix with the mince, water, starch, mustard and seasonings. Shape into evenly sized meatballs and chill for 30 minutes.
Cook on cast iron
Preheat a cast iron plate with the grill set around 200°C for indirect cooking. Fry the meatballs, turning for an even colour, until the centre reaches 71°C. Cook in batches rather than crowding the plate.
