  • Plan the changes in temperature.

    Group dishes by grill setting. It is usually easier to move from a gentle smoke to a hotter bake than to cool a thoroughly heated kamado. Use more than one grill or cook selected dishes ahead if the schedule becomes crowded.

Choose a smoked cured ham or a rotisserie turkey as the main event. Plan backwards from serving time and leave room for resting, glazing and carving. Check the rotisserie capacity before buying the bird.

Saffron bread bakes in a covered cast iron pot before its crust finishes uncovered. Jansson’s temptation and Jimmy’s meatballs cook at around 200°C, so they can fit into the same stage of the menu if there is enough space.

Ginger-soy salmon gives the table another flavour. Keep it separate from raw meat, check its centre temperature and serve warm or cool promptly for a cold platter.
